Order: Margherita ($11). An 11-inch “true Neapolitan pizza” topped with fresh mozzarella and basil, pecorino Romano and extra virgin olive oil.
Crust: Famoso is committed to making authentic Italian pizza — they not only imported their pizza oven from Italy, but the flour and tomatoes, as well. The Caputo “00” flour creates a pliable yet sturdy crust and it's recommended that you fold your pizza before eating. I completely agree about the folding, and inexplicably I think it actually improves the eating experience. Order
Sauce: Small chunks of tomato are visible in the slightly sweet and fresh sauce. The overall quality really shines through because of the simplicity of the margherita pizza. A milder sauce would have ruined the pizza.
Toppings: Fresh mozzarella chunks are spotted throughout the top of the pizza, to which my immediate reaction was to think there was not going to be enough. But, apparently, they know what they're doing because after my first bite, I never looked back. The fresh basil adds a wonderful finishing touch to each slice.
Dining options: Dine in and takeout; no delivery.
Decision: The rotating, bell-shaped fire oven cooks Famoso's pizzas at 900C in a mere 90 seconds, but beyond the speedy, super-hot novelty, it does a really great job. This is the first review on my pizza quest, and I feel that Famoso has thrown down the proverbial gauntlet. The pizza was beautiful in its simplicity, and while obviously there will be many more complex variations of pizza as I move forward, my gut says that this one will stand out in my memory when all is said and done. So, I give this pizza a five out of six slices.
For the record, I ate the entire 11-inch pizza by myself, and while eating one burger a week for about 18 months didn't have any major adverse effects on my body, this pizza challenge may prove to be not quite so kind.... The jury is out on that one.
