| In Ron Shewchuks (winner of the 2004 Canadian National Barbecue Championship) most recent book, Planking Secrets, he addresses the history, techniques and recipes for barbecuing using planks of wood, a relatively easy and extremely flavourful form of preparing just about anything. "Rockin Ronnie" Shewchuk offers his Top 5 Tips for successful planking:
·Be sure you soak your plank soak it in water for at least an hour, or overnight. That will prevent flare-ups and give you better flavour.
·Always keep a spray bottle of water on hand.
·Pre-heat the grill and plank on high, but as soon as its ready to cook on, turn it down to medium.
·Theres more to life than cedar. Try using alder or maple, or other types of planks for really great, different kinds of barbecue flavours.
·Present the food you cook on the plank, for a lovely, rustic look. (Make sure you spray down the edges, so its not smoking too much when you bring it to the table and put it on something heatproof.) |
